For me, the key to a beautiful table is a combination of textures and height to add interest. Colour, of course, adds interest but a monochrome palette setting with textures is better than a myriad of colours with no height or textural interest. Height can be added through layers - think crockery, linen placemats atop tablecloths, napkin rings as well as obvious ways to add height such as flowers and foliage in bud vases and candlelight (be mindful to keep these below eye level, where you can).
